Nourishing Immune Mashed Potatoes

6 Yukon gold potatoes (tonify spleen & stomach)
2 Tbs coconut oil (nourish yin & blood)
1/2 c. coconut milk (nourish yin & blood)
10 shiitake mushrooms (strengthen immune)
1/2 bunch chopped parsley (strengthen liver & nourish blood)
Salt & pepper to taste

Dice potatoes and boil till soft. Drain out water. Add potatoes back to the pot. Add remaining ingredients. Blend with hand blender in pot. Enjoy!
